SIMPLE AND EASY TOMATO SOUP – FREEZER FRIENDLY

I like finding recipes that are simple and easy to cook. This tomato soup happens to fit that exact need.

It may come as a surprise to some that I’ve never attempted to make tomato soup before going vegan, because I really didn’t eat a lot of tomatoes, and still, I selectively eat them.
My guy loves tomato soup though, and instead of him reaching for a can of soup, I wanted something healthier that could be quick and simple.
That’s how I found THIS recipe by A Virtual Vegan to make the following tomato soup! I thought I’d share my thoughts and photos of making this and why I recommend it.

After many times cooking this tomato soup recipe, it’s a solid rotation at home, and I even made it for Mother’s Day this year, because my mother-in-law also loves it!
(Side note, that’s the best isn’t it!? When people love your cookin’.)

I use this recipe for freezing my tomato salsa when I have an abundance of fresh tomatoes growing in the garden!

It’s a very simple recipe, so simple I couldn’t believe I’ve never made it before. Trust me, you’ll probably feel the same way!

Meal prepping this would be AMAZING for the week, and pair it with a grilled chezz…. YUM!

WHY I LOVE THIS TOMATO SOUP RECIPE

Because it takes less than 30 minutes start to finish, chopping included
You can add your personal favorite spices to suit your needs.
You basically sauté for a few minutes then blend everything together. SO. FREAKING. SIMPLE. I looove it.

HOW I MADE THIS TOMATO SOUP RECIPE

8 ingredients is all it take to eat this warm and tasty soup. Not pictured is the nutritional yeast that I add.
In my family, we’re not all adventurous with the onions so I always tweak my recipes to accommodate who I’m enjoying it with.
I used half an onion the first time I made this tomato soup.
I added more garlic than the recipe states, because garlic is the coolest, and I always add more pepper to everything.
Following this recipe exactly as is will deliver delicious results! I just like to develop the taste and add spices to get the dish just right for my family. I’m sure that’s how many of us are.

You chop up all your ingredients, saute the onions and garlic, add in the tomatoes and transfer ingredients to a blender with the seasonings and basil.
I use this Ninja Blender and I love it!
I’ve created cheeses, smoothies, hummus, soups, and even my summer salsas with this kitchen assistant.
One of my best purchases to date! I use it just about every day.
