PEANUTS // LEGUMES

Being allergic to peanuts is most common for people under 18 and is the 2nd most in adults but according to FoodAllergy.Org being allergic to peanuts does not mean you have a greater chance of being allergic to other legumes.
If that’s the case, it opens things up to the wonders of legumes and its benefits, but be sure to consult your allergist to get the full scope of your body’s reactions. Adapt recipes depending on your personal allergies.

MISSING PEANUT BUTTER?

These oatmeal banana bites by Simple Veganista are the perfect pop of YUM.  They are soft, chewy and easy to make using simple ingredients. It’s an approachable recipe that you can freeze and freezing food for busy weeks is the best!

A creamy oatmeal is so versatile, and packs in a healthy amount of nutrients for our bodies. Try this dreamy vegan oatmeal recipe from Veggies Don’t Bite.

I love a tofu scramble myself, so if you get down on tofu then try this savory southwest tofu scramble by Minimalist Baker and load it up with your choice of greens and vegetables.

VEGAN LASSAGNA

Lasagna is one of my favorite things to make and it’s a great meal to experiment with the filling. I love adding something new to the mix for additional plant protein and nutrients!
You know what I’ve been loving inside my lasagna? Dice carrots! Mmm!

Ohhh my! This might be the best new recipe I came across when searching for nut-free vegan recipes. “Wow,” as my husband says! ha. I agree.
I have not tried this yet, but based on recipes, the pictures, plus anything Vegan Rich is (SO good)

LENTILS + DISHES

According to NutritionFacts.Org, lentils pack a significant amount of protein, iron, fiber, zinc and phytates but also have nutrients that are more common in vegetables including fiberfolate, and potassium. Studies have shown that phytates could help protect against osteoporosis and provide anticancer activity. Magic? Whole foods.

Lentils are a legume (like peanuts) and as mentioned above, many other legumes are okay to be added to a nut-free diet, but please, be sure to consult your allergist first!

Potato Salad by Detoxinista

I was never into potato salad growing up, the idea of it drenched in mayonnaise freaked me out a bit.
But here’s a recipe that looks simple enough and delicious that people like me would try it! 🙂  The fresh dill looks magical, maybe add some thyme! MmmMm.

SLURP UP THE SOUPY GOODNESS

One of mine and my husband’s favorite soups lately is this Zuppa Toscana by Veggie Society.

It’s even better the days after because the seasonings marinate and it’s ohhh so GOOD! Seriously.  The house will smell good, and you’ll be craving it for days!

Popcorn is one of the best snacks and this caramel corn recipe by The Pretty Bee blog looks scrumptious! I actually found many recipes on The Pretty Bee (@prettybeeblog) that are allergy-friendly, so if you are looking for a go-to recipe creator, you might have hit a home run here!
